This is one easy peach cobbler that can be made with a store-bought crust and canned peaches.  1 box pre-rolled pie crusts (2 crusts) 1 1/2 cans of sliced Freestone peaches cinnamon, just a little sugar butter nutmeg (pinch) Preheat oven to 350°F. Move the bottom crust into an 8-inch square pan, pinch and shape into place. Put in peaches and juice from 1 can (more if you like), add pats of butter, sprinkle with sugar, cinnamon, and just a pinch of nutmeg. Top with a prepared purchased top crust, pinch and shape over bottom crust to seal. Cut slits and sprinkle lightly with sugar if desired. Put in 350°F oven and bake until brown and bubbly top and bottom. | |

Made this cobbles for the first time today. I added a little tapioca flour for thickening and about 15 small pineapple chunks. VERY tasty. Real time saver.

This recipe sounds similar to my moms (that I now make), except for instead of add only the juice from the peaches, heat the juice from the peaches (not all of it, maybe 1/2 to 3/4 cup...sorry, I never measure). Mix in about 2 teaspoons of cold water and cornstarch to the heated juice and it will thicken. Pour over last and bake as instructed above. Just another option.
