SWEET & SOUR TONGUE | |
3 to 4 lb. tongue 2 tbsp. sugar 1 med. onion, chopped 1/2 c. raisins 1 sm. can tomato paste 1 c. sweet wine 2 tbsp. vinegar 1/2 c. light brown sugar Place tongue in boiling water to cover, boil for 1 hour, drain. Fill pot with cold water and let stand for about 5 minutes. Remove and skin tongue. Slice when cold and set aside. In large frying pan or sauce pot, put 2 tablespoons sugar with chopped onion. Cook until it becomes a soft brown texture (caramelized). Add 1 small can tomato paste, 1 cup sweet wine and 1/2 cup raisins. Place sliced tongue in sauce and cook for 30 minutes in covered pot. Add 2 tablespoons vinegar and 1/3 cup brown sugar. Cook about 15 minutes longer. |
