MEXICAN CASSEROLE 
1 lb. ground beef
1 pkg. taco seasoning mix
2 c. canned tomatoes
1 c. whole kernel corn
1 pkg. corn bread mix (or your favorite recipe)

Brown beef and drain. Stir in dry taco mix. Add tomatoes and corn. Simmer 10 minutes, stirring frequently. Pour into 2 quart casserole. Carefully top with corn bread batter mix or your recipe. Bake at 400 degrees approximately 15 minutes or until brown.
