QUICK - N - EASY MICROWAVE
CHEESECAKE
 
1 (8 oz.) pkg. cream cheese, softened
1/2 c. sugar
1 egg
1 tsp. vanilla
1 c. sour cream
1 (9 inch) graham cracker crust, baked

To cook by microwave: In medium glass bowl, combine cream cheese, sugar, egg and vanilla until smooth; stir in sour cream. Cook at medium 3 1/2 to 4 minutes; stir twice. Pour cheese mixture into pie crust. Cook at medium-low 4 to 6 minutes, or until center is almost set. Chill at least 3 hours or overnight.

Variation: Chocolate cheesecake; add 1 (1 oz.) packet premelted unsweetened chocolate to cream cheese mixture; increase sugar to 2/3 cup.

Since microwave ovens vary in power, you may need to adjust your cooking time.
