ROASTED GARLIC POTATOES 
3 lbs. new potatoes
10 garlic cloves
5 sprigs oregano
2 bay leaves, crumbled
3/4 c. olive oil
Salt & freshly ground pepper

Preheat oven to 450 degrees. Combine potatoes, garlic and herbs in large shallow roasting pan. Pour olive oil over and toss to coat. Season generously with salt and pepper. Roast until tender and browned, stirring occasionally. Transfer potatoes to serving dish. Discard oregano, chop roasted garlic and toss with potatoes. Pour oil over potatoes, toss gently and serve.
