BACON - STEAK ROLLS
1 1/2 lb. cube steak
1/2 tsp. salt
1/8 tsp. pepper
5 slices bacon, chopped
1 1/4 tsp. instant minced onion or 5 tbsp. finely chopped onion
1 tbsp. cooking oil
1 c. milk
2 tbsp. flour

Sprinkle meat with salt and pepper. Cut meat into serving pieces. Place about 2 tablespoons chopped bacon and 1/4 teaspoon onion in center of each piece of meat. Roll pieces up and secure with toothpicks. Cover in flour.

In large fry pan or oven-going pan, brown meat rolls in oil. Bake covered at 350 degrees for 1 1/2 hours, until steak is tender. Remove steak from pan; drain excess fat, reserving meat juices.

Combine milk and flour, add slowly to meat juices. Simmer, stirring constantly, until sauce thickens and comes to a boil. Add steak rolls to sauce; simmer minutes. Serve steak rolls with sauce. Makes 5 servings.
