OLD-FASHIONED SOFT MOLASSES
COOKIES
 
6 c. all-purpose flour
1 tsp. baking powder
1 1/2 tsp. ground ginger
1/2 tsp. ground cinnamon
1 tsp. salt
1 c. lard
2 c. brown sugar, firmly packed
3 eggs
1 c. dark molasses
1 tsp. baking soda
1 1/2 c. hot water
Granulated sugar

Sift the flour, measure and re-sift with next 4 ingredients (baking powder, ginger, cinnamon, salt) 3 times. Cream lard and brown sugar thoroughly. Add eggs, one at a time, and beat mixture thoroughly after each addition. Stir in molasses. Stir in the flour mixture, then add the combined soda and water. Mix thoroughly.

Drop by heaping teaspoonfuls onto greased baking sheets and sprinkle with granulated sugar. Bake at 375 degrees (moderate) for 8 to 10 minutes. Remove to cake racks to cool before serving or storing. Makes 8 to 9 dozen cookies.
