CHICKEN PARMESAN 
4 skinned and boned chicken breasts
1 large egg
1/3 c. Italian seasoned bread crumbs
2 tbsp. butter
1 3/4 c. spaghetti sauce
1/2 c. shredded Mozzarella cheese
1 tbsp. Parmesan cheese

Place chicken between 2 sheets of plastic wrap. Flatten using a meat mallet or rolling pin. Dip chicken into egg and dredge in crumbs.

Melt butter in skillet and add chicken. Cook 2 minutes on each side or until browned. Pour spaghetti sauce over chicken, cover and reduce heat and simmer 10 minutes. Sprinkle with cheese. Cover and simmer 5 more minutes.
