STUFFED MUSHROOMS FOR MICROWAVE 
8 oz. fresh mushrooms (about 12, 1 1/2 inch mushrooms)
3 slices bacon, chopped
1/3 c. finely chopped green onions
1/2 tsp. salt
1/4 tsp. pepper
2-4 drops red pepper sauce (optional)
1/4 c. cream (milk can be substituted for lower calories)
1 tbsp. flour
2 tbsp. shredded Cheddar

1. Wash mushrooms. Remove stems and chop fine. Place caps on paper towel on plate. Microwave at medium-high (70%) 1 minute. Drain, set aside. Place bacon in medium bowl. Microwave on high (100%) until crisp 2 1/2-3 minutes. Drain. Add mushroom stems, onion, salt, pepper, and red pepper sauce. Microwave at high (100%) until mushrooms are tender 2-3 1/2 minutes.

2. Blend in flour, cream, stir until smooth. Reduce power to medium-high (70%). Microwave until thickened 2-3 minutes, stirring once or twice during cooking. Stir in cheese.

3. Fill each mushroom cap with bacon mixture. Place around the edge of a dinner plate. Microwave at high (100%) until cheese melts, 1 to 1 1/2 minutes. Turn plate 1/2 turn after 1/2 the cooking time. Makes about 12.

Since microwave ovens vary in power, you may need to adjust your cooking time.
