CHRISTMAS FRUIT COOKIES 
1/2 c. butter, softened
1 c. brown sugar, packed
2 eggs
1 tsp. vanilla
Pinch of salt
1 c. all-purpose flour
2 c. chopped pecans
6 slices candied pineapple, chopped
1/2 lb. red candied cherries

Beat butter with sugar until fluffy. Add eggs and beat until light. Grease and flour two (11 x 7 x 2 inch) pans. Sprinkle 1 cup nuts in each pan. Drop batter on nuts. Spread evenly.

Press on cherries and pineapple on batter. Bake 30 to 40 minutes until golden brown at 300 degrees.
