MOLDED VEGETABLE SALAD 
1 pkg. lemon gelatin
2 tbsp. fresh lemon juice
2/3 c. cabbage, chopped
2/3 c. green pepper, chopped
2 tbsp. pimentos, finely sliced
2 c. boiling water

Dissolve gelatin dessert mix in boiling water and stir until completely dissolved. Add chopped vegetables and lemon juice. Chill. Slice when firm and serve on lettuce leaves with low calorie dressing.
