PIE SHELLS 
1 1/4 c. all-purpose flour
1/4 tsp. salt
1/3 c. shortening
3 or 4 tbsp. cold water (or more if needed)

Mix flour, salt and shortening until blended. Add small amounts of water until all is moistened. Will make 3 pie shells.

To make tarts, dumplings or deep dish pies, use 1/4 cup shortening and half all-purpose flour and half self-rising flour.
