SLOPPY JOES 
6 oz. ground turkey
2 tsp. vegetable oil
1 c. chopped celery
1 c. chopped onions
1 c. chopped green bell pepper
4 oz. kidney beans, drained and rinsed
1/2 c. tomato puree
1 tbsp. firmly packed brown sugar
2 hamburger buns, cut in half and toasted

Brown turkey using back of wooden spoon to crumble meat; drain fat. In 8 inch non-stick skillet, heat oil over medium heat; add celery, onions, pepper; saute, stirring occasionally, until onions are translucent. Add turkey, cook, stirring occasionally, for 2 minutes; stir in remaining ingredients except buns and bring to a boil. Reduce heat and let simmer, stirring occasionally, until turkey is cooked through and flavors are blended, 12 to 15 minutes. Makes 2 servings.
