SKILLET HASH 
1/3 c. finely chopped onion
2 tbsp. butter
2 c. diced or ground beef roast
2-3 med. raw potatoes, diced or ground
1/2 c. beef broth or leftover gravy
1/2 tsp. salt

In pan cook onion in butter until tender, but not brown. Add all other ingredients. Mix well. Cover and cook over low heat stirring often until potatoes are tender, about 15 minutes. Makes about 4 servings.
