SHRIMP CREOLE | |
1 green pepper, chopped 1/2 c. sliced celery 2 tbsp. cooking oil 1 1/2 c. water 1 bay leaf 1/2 tsp. pepper 2 c. cooked, cleaned shrimp 1/2 chopped onion 1 clove garlic, minced 1 (6 oz.) can tomato paste 1 tsp. salt 1/4 tsp. thyme Prepared rice for 4 persons In skillet, cook green pepper, onion, celery, and garlic in oil until tender. Stir in tomato paste, water, salt, bay leaf, thyme, and pepper; simmer 15 minutes, stirring occasionally. Add shrimp and simmer only until heated through. Remove bay leaf. Serve over rice. Makes 4 servings. |
