PINEAPPLE UPSIDE-DOWN CAKE 
1/4 c. melted butter
1 c. brown sugar
1 can sliced pineapple
3 eggs, separated
1 c. sugar
1 c. flour
1 tsp. baking powder
1/4 tsp. salt
5 tbsp. pineapple juice

Put melted butter in bottom of iron skillet. Sprinkle brown sugar onto butter and then lay pineapple slices onto brown sugar. Beat egg whites until stiff. Set aside.

Beat egg yolks and add 1 cup sugar. Mix together flour, baking powder and salt. Add to egg yolk mixture, then add egg whites and juice. Pour batter over pineapple slices.

Bake at 350°F for 30 minutes.
