PINEAPPLE UPSIDE - DOWN CAKE 
2/3 c. packed brown sugar
1/4 c. butter
1 can sliced pineapple, drained
Cherries if you want
1 1/3 c. flour
1 c. sugar
1/3 c. shortening or butter
3/4 c. milk
1 1/2 tsp. baking powder
1 egg

Melt butter in skillet (oven-proof) or square 9 inch pan. Sprinkle brown sugar over melted butter. Arrange pineapple slices on sugar mix. Place a cherry in the center of each slice of pineapple.

Beat remaining ingredients in a large bowl. Pour over fruit in skillet and spread evenly. Bake until toothpick comes out of center clean. Turn skillet upside down on heatproof plate. Bake at 350 degrees for 45-50 minutes.
