TAMALE PIE | |
1 lb. ground beef 1 c. onions 1 c. green pepper 2 (8 oz.) cans tomato sauce 1 (12 oz.) can corn, drained 1/2 c. ripe olives 1 clove 1 tbsp. sugar 2-3 tsp. chili powder 1 1/2 c. shredded cheese 3/4 c. corn meal 2 c. cold water 1 tbsp. butter Cook beef, onions, and green pepper until tender; drain off fat. Stir in tomato sauce, corn, olives, garlic, sugar, chili powder, and salt and pepper to taste. Simmer until thick, about 20-25 minutes. Add cheese; stir until melted. Turn into well greased 9 x 9 x 2 inch baking dish. Topping: Stir corn meal and 1/2 teaspoon salt into cold water. Cook and stir until thick. Stir in butter. Spoon over hot meat mixture. Bake at 375 degrees about 40 minutes. Serves 6. |
