FRUIT COCKTAIL CAKE WITH ICING 
2 eggs
1 1/2 c. sugar
2 c. flour
2 tsp. baking soda
1/4 tsp. salt
1 #2 can fruit cocktail with juice
1 tsp. vanilla

Beat eggs. Add sugar; beat about 5 minutes. Sift dry ingredients. Add to egg and sugar mixture. Add fruit cocktail and vanilla; mix. Pour into 13 x 9 x 2 inch greased pan. Bake in 350 degree oven for 30 minutes.

ICING:

1 sm. can evaporated milk
2/3 c. sugar
1 stick butter
1/2 tsp. vanilla
1/4 c. nuts, optional
1/2 c. coconut

Mix milk, sugar and butter. Cook in saucepan until thick. Add vanilla, nuts, coconut. Ice cake.
