BEEF CUBES IN SOUR CREAM 
2 lbs. meat from beef shank, cut in 1 inch cubes
2 med. onions, sliced
1/2 c. dairy sour cream
1/2 c. water
2 tbsp. grated American cheese
Salt and pepper

Roll meat in flour; brown in hot fat. Add onion. Combine remaining ingredients; pour over meat. Cover tightly and cook slowly until tender, about 2 hours. Makes 6 servings.

This recipe was simply delicious for a winter meal. I served it on top of a bed of white rice. It reminds me of the way my grandmother use to make it.
