MARINATED CHICKEN 
1 qt. buttermilk
2 tsp. salt
1 tbsp. lemon juice
1 tbsp. coriander
1 tbsp. cumin
1 tsp. red pepper
1 tsp. garlic powder
3-4 lb. chicken, cut into serving pieces

Combine buttermilk, salt, lemon juice, coriander, cumin, red pepper, and garlic powder, and pour over chicken pieces. Cover and refrigerate overnight. Remove chicken from marinade and cook on outdoor grill over hot coals for 20-30 minutes until tender, or in a microwave oven on full power for approximately 8 minutes per pound of chicken. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
