POTATOES AU GRATIN 
8 qt. potatoes (cooked in skins)
1 1/2 c. butter
6 tbsp. salt
1 1/2 c. flour
3 qt. milk
1 tsp. pepper
1 1/2 lb. Velveeta

Make sauce of butter, salt, flour, milk, pepper and cheese. Mix with the potatoes which have been boiled, cooled and diced. Pour into buttered pans. Sprinkle paprika on top. Bake at 350 degrees for 1/2 hour. Serves 25.
