HUMMINGBIRD CAKE 
3 c. all-purpose flour (unsifted)
2 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3 eggs, beaten
1 c. oil
1 (8 oz.) can crushed pineapple
2 c. chopped bananas
1 1/2 tsp. vanilla

Combine first 5 ingredients until well mixed. Add beaten eggs and oil until well mixed. Do not beat. Add vanilla, pineapple, chopped pecans and bananas and stir until well mixed. Spoon into greased and floured 9-inch pans.

Bake at 350°F for 25 to 30 minutes. Let cool then ice as follows:

Icing:

1 (1 lb.) box powdered sugar, sifted
1 stick butter, softened
1 (8 oz.) pkg. cream cheese, softened
1 tsp. vanilla

Combine cream cheese and butter until well mixed. Add powdered sugar and vanilla.
