CHICKEN IN BEER | |
4 lg. boneless chicken breasts, skin removed, each cut into 3 or 4 smaller pieces 2 tbsp. low sodium mustard 1 tbsp. basil 1 1/2 c. fresh sliced mushrooms 1 clove garlic, minced 1 c. no salt tomato sauce (or paste) 1 c. light beer 3 tbsp. olive oil 1 c. chopped white onions In medium size pan saute onions and garlic in olive oil. Add fresh sliced mushrooms. Saute until tender. Add light beer, tomato sauce and spices. Add chicken pieces. Cover pan and simmer on low heat for 30 to 35 minutes or until tender. Above is a heart healthy recipe. Low cholesterol and low sodium. Serves 4. |
