CHEF BUSTER'S SQUASH DU JOUR | |
3 oz. butter, melted 1/2 lb. zucchini, sliced 1/2 lb. yellow squash 1 sm. yellow onion, julienned 1 sm. bell pepper, julienned 2 med. carrots, peeled and sliced 1/4 c. green onions, sliced 2 tbsp. fresh parsley, chopped 1 pinch sweet basil 1 pinch oregano 1 pinch salt Using a large saute pan heat butter on high heat and add zucchini, squash, yellow onion, bell pepper, and carrots. Saute the vegetables until hot and add green onions, parsley, basil, oregano, and salt. Mix all ingredients together, just getting vegetables hot. The secret to this recipe is to get the vegetables hot; do not cook and they will nice and crisp. Serve immediately. |
