MEXICAN FRUIT SALAD 
4 bananas
4 oranges
4 apples
1 sweet pepper or pimiento
3 tbsp. shredded coconut
1/4 c. Fruit French Dressing
1 tsp. fresh min or 1/4 tsp. dried mint

FRUIT FRENCH DRESSING:

1/2 tsp. salt
1 1/2 tsp. Equal
1/4 tsp. dry mustard
1/4 tsp. curry powder
2 tbsp. lemon juice
2 tbsp. orange juice
2/3 c. vegetable oil

Mix the dry ingredients. Add fruit juices and mix well. Pour in the oil slowly while stirring.

Cut the bananas once lengthwise and then once in half making 16 pieces. Arrange sectioned apples and oranges and strips of peppers or pimiento over the bananas. Add the dressing and let stand in refrigerator about an hour. Sprinkle with mint and serve. 6 servings.
