ORANGE - SAUCED SWEET POTATOES
OR CARROTS
 
3 med. sweet potatoes, peeled & sliced 1/4 inch thick or 3 c. sliced carrots
2/3 c. orange juice
1/4 c. water
2 tsp. cornstarch
1 tbsp. brown sugar
1 tbsp. butter
1/3 tsp. salt
Dash of ground cloves

Combine sweet potatoes or carrots with orange juice in 1 quart covered casserole. Microwave on high power for 8 to 10 minutes, until tender. Mix together water and cornstarch in a small dish. Add to vegetables along with remaining ingredients. Microwave, covered, 4 minutes on high power, stirring once. Serves 4 to 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
