TORTILLA SOUP 
3 cloves garlic, minced
1 onion, chopped
1 tbsp. oil
4 cans chicken broth
1 can (or 2 c.) corn
1 can diced green chiles
1 1/2 c. cooked chicken
2 carrots, diced
juice of 1 lime
2 tsp. chili powder (adjust to taste - tabasco sauce may also be substituted)
shredded cheddar cheese
tortilla chips
diced avocado

Sauté garlic and onion in oil until translucent. Add broth, corn, chiles, chicken, and carrots. Bring to a low boil; simmer, stirring occasionally. Add lime juice and chili powder; stir and simmer until heated through. Salt to taste.

Serve with shredded cheese, tortilla chips, and avocado.
