KANSAS SUGAR COOKIES 
1 c. butter, softened
1 c. sugar
1 c. confectioners' sugar
1 c. oil
2 eggs
4 1/4 c. sifted flour
1 tsp. cream of tartar
1 tsp. baking soda
1 tsp. vanilla
1 tsp. almond or lemon extract

Cream butter, sugar and powdered sugar in mixer bowl until light and fluffy. Blend in oil and eggs. Add sifted dry ingredients. Mix well. Mix in flavoring. Shape into small balls (tablespoon size). Place on ungreased cookie sheet. Flatten with bottom of glass dipped in additional sugar. Bake at 350 degrees for 12 minutes (light brown). Cool on wire rack. Dough may be stored in refrigerator for 1 hour. Makes 4-5 dozen cookies.
