BLENDER BANANA BREAD | |
2 1/2 c. sifted all-purpose flour 3/4 c. sugar 2 1/2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. baking soda 1/8 tsp. nutmeg 1 1/2 c. bran (any kind) 1/3 c. nuts 2 eggs 1/4 c. salad oil 2 tbsp. milk 1 tsp. vanilla 3 c. thinly sliced bananas (3-4 lg.) Preheat oven to 350 degrees. Grease a 9 x 5 x 3 inch loaf pan. Sift together into large bowl flour, sugar, baking powder, salt, baking soda and nutmeg. Process bran in blender to fine crumbs. Stir into flour mixture. Process nuts to chop. Add to flour. Process eggs, oil, milk and vanilla just until blended. Add bananas. Process until smooth. Pour over dry ingredients. Stir just until moistened. Turn into pan. Bake 50-60 minutes or until tester inserted in center comes out clean. Let cool 15 minutes before removing from pan. Makes 1 loaf. |
