CUCUMBER SALAD WITH SPICY
DRESSING
 
2 med. cucumbers
1 tsp. soy sauce
1 tbsp. white vinegar
2 tsp. sesame seed oil
1 tbsp. sugar
1/4 tsp. Tabasco sauce
1/2 tsp. salt

Peel cucumbers, then cut them lengthwise in 2. Scrape out seeds with small spoon, leaving a boat like shell. Cut shells crosswise into 1/4 slices. In a small bowl, combine soy sauce, vinegar, sugar, oil, Tabasco and salt; mix well. Add cucumber. With a large spoon, toss to coat each slice thoroughly with the dressing. Chill slightly before serving. Serves 4 to 6 as a side dish. A dash of red pepper is a good substitute for the Tabasco.
