YORKSHIRE PUDDING 
2 eggs
1 c. all-purpose flour
1 c. milk
1 tsp. salt
1/4 tsp. freshly ground pepper
4 tbsp. meat drippings (do not use more!)

Preheat oven to 450 degrees. Put baking pan in preheated oven for 10 minutes. In a large bowl, beat the eggs with an electric mixer until frothy. Gradually beat in the flour and milk. When batter is smooth, add salt and pepper. Remove the hot pan from the oven.

Distribute hot drippings evenly over the bottom of the baking pan. Pour in the batter. Place the pan in the middle of the oven and bake for 10 minutes.

VERY IMPORTANT: Do not open oven at any time during baking. Reduce heat to 375 degrees and bake another 15 to 20 minutes. Cut into serving size pieces and serve immediately. Serves 10. Gravy from the roast may be poured over pudding.
