ALMOND AND APRICOT JAM 
2 lbs. ripe apricots
3 c. sugar
1/3 c. lemon juice
1/2 c. sliced almonds
1/2 tsp. almond extract

Pit and chop apricots; measure 4 cups. In sauce pan, mix apricots, sugar, and lemon juice. Bring to rolling boil. Boil hard, stirring for 5 minutes. Remove from heat. Stir in almonds and almond extract. Stir for 5 minutes, skimming the foam. Pour into hot clean half pint jars, leaving 1/4 inch head space. wipe jar rims; adjust lids. Process in boiling water bath for 15 minutes. (Start timing when water boils.) Makes 3 half pints.
