WHITE LEBKUCHEN COOKIES 
2 whole eggs plus 1 yolk, save white
1 1/4 c. white sugar

Beat until creamy.

Rind of 1 lemon, grated
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. baking soda in 1 tbsp. of water
2 c. flour and 2 tbsp.
1/4 to 1/2 c. white raisins or mixed candied fruit
1/4 c. to 1/2 c. chopped almonds
1/4 tsp. cloves
Pinch of salt

This recipe does NOT have shortening! Mix all ingredients well. Roll on floured board. Cut with knife in 2 inch squares. Beat egg white with fork until frothy. Brush on cookie very generously.

Bake on greased cookie sheet at 375 degrees for 10 to 12 minutes. Do not overbake. Delicately brown. Keep in freezer.
