AUTUMN'S ZESTY PEPPERS 
1 lb. lean ground beef
3/4 c. Minute Rice
Onion, chopped
1/4 tsp. garlic
1/4 tsp. parsley
1 can Campbell's Zesty tomato soup
1 can chicken broth
Cheddar cheese, sliced
4 bell peppers

Microwave directions: In a dish, stir together tomato soup, chicken broth, 1/2 of garlic, and parsley; set aside. Mix together with hands, ground beef, onion, rice and seasonings (I also add a dash of Season All). Cut off tops of peppers and rinse. Clean out insides. Set in a casserole dish big enough to put lid over peppers. Stuff peppers with ground beef mixture. Pour sauce over and around peppers and cover dish. Microwave on high for 20-24 minutes, rotating dish halfway through cooking time. Top with cheese and let stand 5 minutes before serving. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
