SCALLOPED CARROTS 
4 c. sliced carrots
1 sm. onion
3 tbsp. butter
1 can cream of celery soup
1/2 c. diced cheese, any kind
Salt and pepper to taste
3 c. croutons, 1/2 c. butter, melted (sauteed together until crisp)

Precook carrots. Saute onions in butter. Add soup, cheese, salt, and pepper. Combine with carrots. Top with croutons. Bake at 350 degrees for 15-20 minutes.
