STREUSEL-FILLED COFFEE CAKE 
1 1/2 c. all-purpose flour
3/4 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1/4 c. shortening
3/4 c. milk
1 egg

STREUSEL MIXTURE:

1/2 c. brown sugar (packed)
2 tsp. cinnamon
1/2 c. finely chopped pecans
2 tbsp. butter, melted

If using self-rising flour, omit baking powder and salt.

Heat oven to 375 degrees. Grease a round or square layer pan. Blend all ingredients except streusel mixture, beat vigorously for approximately 1/2 minute. Spread 1/2 of batter in pan; sprinkle 1/2 the streusel mixture over batter in pan. Top with remaining batter, then remaining streusel mixture.

Bake 25 to 30 minutes or until wooden pick inserted in center comes out clean. Serve warm. Makes 9 to 12 servings.
