SALMON CROQUETTES 
2 tbsp. butter
2 tbsp. flour
1/2 c. milk
Pinch salt
1 (15 to 16 oz.) can pink salmon
1/4 c. cooked onions, chopped
1/2 tsp. white pepper
1 tbsp. mayonnaise
2 tbsp. coffee cream
2 eggs, beaten
1/2 c. dry bread crumbs (white)

Blend together the butter, flour, milk, and salt. Put the sauce into a bowl and add everything else but the egg and bread crumbs. Shape into small balls or pyramids. Dip each first into egg, then the bread crumbs. Let stand for 15 minutes, then repeat battering process. Let stand 15 minutes. Deep fry until golden brown and serve immediately.
