GARLIC ROASTED POTATOES | |
1 lb. new white potatoes, about 1 1/2 inches long 6 lg. cloves garlic 3 tbsp. good olive oil 3/4 tsp. kosher salt Freshly ground black pepper Heat the oven to 450 degrees F. Scrub the potatoes well and dry thoroughly. Place them in a heavy, ovenproof casserole, with a tight fitting lid, that is just large enough to hold them two layers deep. Add the other ingredients and mix well so the potatoes are all coated with the oil. Cover and bake for 50 minutes or until done. About halfway through the cooking time turn the potatoes again and coat with the oil. |
