ROAST LOIN OF PORK | |
4-5 lb. pork loin 2 tsp. salt 1/2 tsp. pepper Trim excess fat from meat. Rub with salt and pepper. Put on a rack in a shallow pan. Roast in preheated slow oven at 325 degrees for 35 to 40 minutes to the pound, or until meat thermometer registers 185 degrees. Serve broiled peach halves or baked apples if desired on the platter with the meat. |
