RATATOUILLE 
1/4 c. vegetable oil
1 onion, sliced
1 clove garlic, minced
1 eggplant, peeled, halved, and sliced
2 zucchini, sliced
1 1/2 tsp. oregano
1/2 tsp. basil leaves
1/8 tsp. pepper
2 green peppers, halved, seeded and cut into strips (optional)
2 tomatoes, diced
1 1/3 c. shredded wheat biscuits, finely crushed
1 tbsp. chopped dried parsley flakes

Saute onion and garlic in 2 tablespoons oil about 5 minutes. Top with layers of eggplant and zucchini; sprinkle with oregano, basil and pepper. Top with layers of green peppers and tomatoes. Simmer, covered, until vegetables are tender, about 20 minutes. Toss remaining oil with shredded wheat crumbs and parsley. Sprinkle over vegetables; brown under broiler 2 minutes. Serves 6.
