MY BEST POTATO SOUP 
2 c. diced raw potatoes
1 qt. boiling water
1 pt. milk
1 onion
4 tbsp. butter
1 tbsp. flour
1 tsp. salt
1 tbsp. parsley, chopped
Pepper to taste

Cook potatoes in boiling water until soft. Drain off, keep 1 pint of potato water. Heat milk and onions in double boiler. Cook parsley in butter; add flour. Stir until blended. Combine milk and potatoes. Cook 2-3 minutes. Add salt and pepper. I cook it longer until it thickens.
