CATFISH STEW | |
1 lb. catfish fillets, skinned 1 c. chopped onion 1/3 c. melted fat 1 (1 lb. 12 oz.) can tomatoes 2 c. potatoes, diced 1 c. water 1/4 c. ketchup 1/2 tsp. salt Pepper to taste 1 (1 lb.) can mixed vegetables Cut fillets into 1-inch pieces. Saute onion in the fat. Add the tomatoes, potatoes, water, ketchup, salt and pepper. Cover and simmer about 15 minutes longer or until the potatoes are cooked. |
