CANADIAN LEMON BREAD 
6 tbsp. shortening
1 c. sugar
2 eggs
1/2 c. milk
2 tsp. baking powder
1 1/2 c. flour
Juice of 1 lemon & rind
1/2 c. sugar

Mix shortening and 1 cup sugar. Add 2 beaten eggs. Combine flour and baking powder. Add dry mixture alternating with milk. Add the rind of 1 lemon to the mixture. Bake at 350 degrees for about 1 hour. While still hot and in pans. Pour mixture of 1/2 cup sugar and 1/4 cup lemon juice over bread. Let cool. Yield: 1 loaf.
