SHEPHERD'S PIE 
1 lb. lean ground beef, browned and drained
1/4 c. diced onion
1 pkg. frozen vegetables, cooked as directed (add salt and pepper to taste)
2 c. hot mashed potatoes
1 c. shredded cheese

Add onion to ground beef and cook until tender. Add veggies. Pour in a well greased casserole dish. Top with potatoes, sprinkle with cheese. Bake in 400 degree oven for 15 minutes.
