GINGERED VEGETABLES 
2 c. cooked cut up chicken or beef
1 c. sliced carrots
1 c. sliced celery
1 c. sweet red or green pepper strips
1 c. broccoli flowerets
1 c. snow peas
1 med. chopped onion
3 tbsp. cornstarch
1/2 tsp. ground ginger
2 c. chicken or beef broth
1 tsp. soy sauce
1 c. rice, cook & drain & set aside

1. Into a 3 quart casserole combine vegetables and small amount of water. Cover and microwave on high 6 minutes or until vegetables are tender-crisp, stirring once during cooking.

2. Stir in remaining ingredients until blended. Cover microwave on high 4 minutes or until thickened, stirring once during cooking. Serve over rice. Makes 4 cups.

Since microwave ovens vary in power, you may need to adjust your cooking time.
