CABBAGE 'N NOODLES 
3 c. cabbage, sliced
2 med. onions, sliced in half moons
1/4 c. green peppers, chopped
1 c. vegetable broth
1 c. grated cheese (Parmesan and Cheddar)
3 tbsp. tamari
2 tsp. curry
2 tsp. paprika
4 c. cooked noodles (Japanese udon are best but not necessary)
1/2 c. melted butter
Nuts (optional - sunflower, peanuts, almonds, sesame seeds)

In a large, heavy skillet (or wok), saute cabbage, onions, and green peppers about 5 minutes. Add 1 cup vegetable broth. Cover and cook 5 more minutes. Add seasonings, then mix with noodles and cheese. Serve hot.

For variety, sprinkle some chopped nuts on top, or try using Chinese cabbage in place of regular cabbage.
