CAJUN FISH | |
6 fillets (cod, haddock, catfish) 1/2 c. tomato sauce 2 pkgs. cheese-garlic salad dressing mix 2 tbsp. melted shortening or oil 2 tbsp. chopped parsley 2 tbsp. grated Parmesan cheese Clean, wash and dry fish. Combine other ingredients except cheese. Brush fish with sauce. Place fish in a well-greased baking dish and brush with remaining sauce; sprinkle with cheese. Let stand 30 minutes. Bake in moderate oven 350 degrees for 25-35 minutes, or until meat flakes off when tested with a fork. Turn oven control to broil. Place fish about 3 inches from flame and brown for 1-2 minutes. Serves 6. |
