CRAWFISH JAMBALAYA | |
1 lb. crawfish tails 1/2 c. butter 2 tbsp. garlic, chopped 1 1/2 c. onion, chopped 1/2 c. celery, chopped 1/2 c. bell pepper, chopped 1 can Ro-Tel tomatoes and green chilies and juice 1 tsp. salt 1 tsp. black pepper 1/2 c. parsley, chopped 1/2 c. green onions, chopped 3 c. cooked rice Saute garlic, onions, celery and bell pepper in butter until wilted. Chop Ro-Tel tomatoes and add to vegetables. Simmer for 15 minutes. Add salt, pepper, crawfish tails, parsley and green onions. Cook 1 minute just to heat well. Mix with rice. Serve as a side dish. This is very highly seasoned with pepper. If you don't like it that hot, cut back on the black pepper and Ro-Tel tomatoes. |
