ITALIAN BISCUIT | |
6 eggs 2 1/2 c. sugar 1 1/2 c. Wesson oil 1 tbsp. baking powder 1 tsp. lemon extract 2 tbsp. anise seed 1/2 tsp. salt 1/2 c. rum 3 1/2 c. flour 1/2 c. citron, chopped 1/2 c. toasted almonds, chopped Beat everything together and it will be a thin batter. Spread it on a cookie sheet. Bake in oven at 375 degrees for 20 to 40 minutes. Cut into long strips and then into diagonal strips. Toast under broiler until light brown. Every time I visit my dear friend Leda, who is Italian, she gives me a care package of these cookies to take home. This is her recipe. |
